
Ingredients
3 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 Tbsp. ground cinnamon
3 eggs
1 cup avocado oil
2¼ cups sugar
3 tsp. vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
Directions
Preheat oven to 325° F. Grease and flour two 4 x 8-inch loaf pans.
Sift flour, salt, baking soda, baking powder, and cinnamon together in a medium bowl. Beat eggs, oil, sugar, and vanilla together in a large bowl. Add sifted ingredients to the creamed mixture and beat well. Stir in zucchini and walnuts until well combined, and pour batter into prepared pans.
Bake for 40-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on rack for 20 minutes, then remove from pan and let cool completely.
